A selection of five carefully curated wines will showcase its versatility with dishes from Italy and cheese from France. In the first course, Carpaccio di Polipo alla Livornese is an octopus starter marinated with extra virgin olive oil enjoyed in the port city of Livorno on the west coast of Tuscany. It pairs with the refreshing Frescobaldi Gorgona Bianco Toscana IGT 2021, a proud collaboration wine with the penitentiary inmates of Gorgona. A Bruschetta con Parma loaded with fresh buffalo mozzarella, cherry tomato concassé, rocket leaves and basil requires the energetic Frescobaldi Tenuta Calimaia Vino Nobile di Montepulciano DOCG 2019 for its similar fruity profile. Orecchiette con Salsiccia e Friarielli comprises a hearty palate of pork sausage, broccolini, garlic and chilli, which is well matched to the structured Frescobaldi Tenuta Perano Chianti Classico Riserva DOCG 2019. Recalling the famous Tuscan steaks, the Entrecote di Wagyu Australiano MB6/7 is pan-seared with mortar onion dressing, green asparagus and steak jus, which calls for the robust Frescobaldi Tenuta Castelgiocondo Brunello di Montalcino "Ripe al Convento" Riserva 2013. For a long and persistent finish, the Frescobaldi Tenuta di Castiglioni "Giramonte" Toscana IGT 2009, with its mellowed Merlot and Sangiovese fruit character, is the ideal accompaniment to Camembert cheese and crackers.
