Chef Alain is renowned for his exquisite Barcelonan-inspired techniques that embody the essence of the Mediterranean soul, bringing the vibrant, cosmopolitan dining scene of Barcelona to the heart of Singapore. Having spent a decade at the legendary El Bulli restaurant and its dedicated food research laboratory El Bullitaller in Spain, Chef Alain conveys his expertise through a dynamic menu at Olivia Restaurant & Lounge. Alain curates hearty, homely and traditional dishes that are revitalised as contemporary renditions of the classics.
The exclusive six-course menus are centered upon typical Spanish cuisine. The event starts with two snacks, consisting of Chef Alain’s Artichoke with Bone Marrow and Caviar and Chef Lee’s Mushroom and Onion Tart. These will be followed by the first course consisting of the Homemade “Catalunya” Lobster Avocado Roll from Olivia Restaurant & Lounge and V Dining’s Pea and Bacon Soup. The next course is a combination of Chef Alain’s Japanese Tuna Belly in Marmitako Sauce, Braised “Breese” Pigeon, Pickled Beetroot and Pistachio and Chef Lee’s renowned Lasagna. Completing the Spanish experience is the infamous Homemade Creamy Cheesecake from Olivia Restaurant & Lounge. All dishes will be paired with a carefully curated selection of organic and biodynamic wines from the French winery, Maison M. Chapoutier.
