Executive Chef, Joseph Sergentakis, who has been spearheading Cé La Vi’s new culinary direction, has been awarded Asian Cuisine Chef of The Year from the World Gourmet Summit’s Awards of Excellence (AOE) 2018.

Following this distinguished global achievement, Chef Joey will be presenting his interpretation of Modern Asian cuisine for The World Gourmet Summit (WGS) 2018. Exclusively showcasing his specially curated Chef Tasting Menu for a one-night-only event on the 26th April, Chef Joey will surprise and delight guests with exceptional creations. The lavish tasting menu will offer guests a wine pairing option with each dish.

The extensive menu includes six courses, featuring some of Asia’s most sought-after dishes. Delectables include; Tasmanian Salmon Tartare & Amur River Caviar and Duo of Sour – Spicy Mushroom Soup & Seared Mushroom Gyoza, which is delicately paired with Veuve Clicquot Ponsardin Brut. This is followed by the Rice Flake Crusted Tiger Prawn and Tamarind Glazed Grilled Sea Bream, served with the Gewurztraminer Les Princes Abbes Schlumberger. For the savoury finale, Braised Short Rib Beef Rendang will be complemented by the Brunello Di Montalcino Colosorbo.

Completing the decadent curation is Mango Lassi Cotton Cheesecake, which is paired with Samling 88 Beerenauslese, Hans Tschida. The lavish menu demonstrates Chef Joey’s strong unyielding desire to ensure that his ingredients and produce hail from the finest sources.
