Kilo is excited to present the 6th instalment of Kilo Cooking Beats—Raíces with Oliver Hyde (Maggie Joan’s).

Originally from Norwich, England, Chef Oliver's interest in cooking started from the long hours he spent watching his chef father run a local restaurant. Over the years, Oliver honed his skills at some of the most prestigious restaurants in Europe, including Michelin-starred eateries like The Waterside Inn and Restaurant Gordon Ramsay, before coming to Singapore and working at Pollen. Afterwards, Hyde was given the opportunity to run his first kitchen as the Head Chef of Maggie Joan’s, which serves up Mediterranean cuisine, driven by fresh produce and seasonality, inspired by his childhood and travels across Europe and Asia.

This instalment of Kilo Cooking Beats—Raices will see Oliver cooking up a Norfolk feast, working with ingredients like sea vegetables, wild mushrooms, courgettes, lamb and spices. Think dishes like the Taramalsata made with Squid Ink Tortilla and Nori; Wild Mushroom Casserole with Bacon and Toast; as well as Slow Roasted Lamb Shoulder accompanied with a side of Zucchini Salad, Feta, and Hazelnuts.
