Kilo is excited to present the 5th instalment of Kilo Cooking Beats – Raíces with Tim Ross-Watson, the former Owner and Executive Chef of Pyxiemoss.
Tim has worked in various culinary establishments in London, including the 5-star Goring Hotel, Restaurant Gordon Ramsay, and Embassy by renowned Michelin-starred Chef Garry Hollihead. For Kilo Cooking Beats – Raíces, Tim will draw inspiration from his British roots and love for Asian cuisine to present a playful 7-course British-Indian feast. Expect dishes like Beer Battered Fish served with chips, brandy tartare sauce, mushy peas and ketchup, as well as Duck Liver cooked with port, dates jam, parsley, celery, burnt butter, and marsala beer toast.
